How can I locate and extract the data of a specific parameter (i.e. blood velocity, TAMEAN) from a DICOM file?

Hello,
For a study, ultrasound images were made of the arteries of our subjects. They are made in pulse-wave mode, using doppler in order to extract a Time-Averaged Mean (TAMEAN) blood velocity.
I would like to analyse these blood velocities, but I can't seem to locate and extract these specific data in my DICOM file (using dicomread and dicominfo). When I open these files in Matlab, I receive a 3-dimensional matrix using dicomread.
Can anyone help me on how to interpret these, and how to extract the data I need?

I might be able to help. I have recorded Doppler ultrasound blood flow data from femoral, carotid, radial, brachial, and middle cerebral arteries of subjects. I wrote software in Labview to extract the velocity. The files I was using were not DICOM. Please post a de-identified sample file. (Google "dicom de-identify" if necessary.)
