On the System Requirements page, if you select "Previous Releases" and look at the requirements for release R2021a on Mac the supported operating system versions for that release are:
- macOS Big Sur (11)
- macOS Catalina (10.15)
- macOS Mojave (10.14)

And, carrying on in the other direction, R2022b is first release that lists Ventura OS.
There is a note that MATLAB on Apple silicon uses the Rosetta emulator. How performance would compare to native Intel is anybody's guess, but general information is that since Apple developed it and it is tightly coupled to the chip, it may even speed up Intel-based code. No guarantees, of course, but that probably shouldn't be a factor in the decision although upgrading your MATLAB license might be...

If you are switching to Mac with Apple Silicon (M-series) CPUs then it is recommended to get R2023b (beta) or later, as they will be native on Apple Silicon.
Notes:
- Polyspace and possibly a small number of other toolboxes will take more releases, and currently do not work even under Rosetta 2.
- There has not been GPU support on Mac for several releases now, and it is not expected that there will be any GPU support for several years, possibly never. NVidia withdrew from the Mac market (which was not a surprise to anyone following the relationship between NVidia and Apple), and Apple has reportedly not been easy to work with.

I think there's no way you'll get TMW to say anything beyond what is on the official support page; I suppose there's the chance somebody else may have tried and will see the Q? and comment on their success or lack thereof...
