The student version has the Riemann zeta function as a standard feature. Does the full version have it ? If so, what is it called ?

Yes, it exists in the Symbolic Math Toolbox. It's called "zeta".

Clarification: the Symbolic Math Toolbox is an optional extra-cost add-on for the non-student versions.
