Modelling and simulation of a flight control system.

I want to model and then simulate the flight control system of a propelled aircraft in MATLAB. Where do i begin relating the software? What blocksets should i focus on?

i have another query. what if i want to add a pilot joystick to this demo to take real time inputs for simulation? how can it be done?
