How to build a central controller of IoT devices in a LAN (no internet connection)

I am working in a university lab. Due to security reasons, the department doesn't allow our sensors and micro-controllers to connect to the school WiFi network. Thus, our IoT devices stay on a local area network without internet connection.
However, we need to build a graphical user interface to monitor and control the IoT devices on a computer (that stays on the school network) using MATLAB. But if we connect the computer to the LAN, the MATLAB will loose the connection to its license server and refuse to work. And the offline license is not available to us.
We tried to install a second network interface card (NIC) on the computer, and connect it to the LAN. But the MATLAB seems to stick with the original connection that has internet, and cannot communicate with the IoT devices.
