Subscribe to Data Feeds that are not supported in the Data Feed Toolbox

Is it possible to subscribe to other Data Feeds than the ones (like Bloomberg and Yahoo) supported by the Toolbox? (To be more specific, I want to connect to the Binance and BitMex exchanges in real time, not just download data as a file.)

The appropriate approach for that is to create a custom WebSocket for the exchange or broker that you want to use.

Sadly, Matlab doesn't have a built-in solution for that, so you should consider creating a Python or Java WebSocket and call it via trough the external language interface that Matlab has.
