Multiple MATLAB programs with web cam can be run simultaneously?

I devolop the MATLAP program for my experiment which is the mornitoring system for mice. This is real-time and long-term recording (4-6 weeks). For one unit (animal), it needs one webcam recording and 8 analog inputs via National Instrument board. The MATLAB program has to be run seperately each animal. And I'd like to extend to 10 animals.
My question is that the seperated MATLAB programs can be run simultaneously in one computer? The starting and ending time might be different. For example, I run the 1st m-file and don't want to quit then can I run another m-file?
Another question is: The each unit include the webcam recording, meaning I need to connect 10 webcams to one computer. Can I connect 10 webcams using simply USB herb? Is there any limitations and I have to consider when I buy webcams?
I just bought 'Image Acquisition Toolbox' and need some references. I look forward to hearing from you.

Dear Yujaung, how to do real time processing with video camera can u tell me the suggestion.how to get data from each and every frame and where u store these bulk of data.
