how to create a proper 3D plot

I want to create a plot representing the temperatue at the i and j nodes
Tplot = Ttime{1,100} % get the 5x21 matrix stored in array index Ttime
i = 1:21
j = 1:51
%suggested plot function
what would be the best way to do this
