I'm able to download a wide range of toolboxes from my account on Mathsworks, but I can't seem to install any of them; there is no installer in the package download. Knowing matlab this won't be a simple case of copy and paste in the correct folder directory of the software (i'm assuming) any help?
I'm running R2013b on a Mac, just managed to install MATLAB but realised I have none of the apps I need, namely, curve fitting tool/app

The Computer Vision Toolbox is not included with the MATLAB Student Suite, so you will need to purchase it (unless you are using a University license that includes it.)
Use the Add-On Explorer to search for Computer Vision, and there should be a Buy button.

Vito,
You need to download the toolbox .zip files as .zip files into the directory that was created when you unzip'd the main installer. Then, with the .zip files intact, start up the installer.
The script launched from the installer web page, the one that is supposed to work for the Mac, is more or less crud if you are not using Safari, and even then you have to have specifically configured Safari to know how to deal with those kinds of files. Skipping the script and downloading everything is much easier once you know the trick that the first is to be unzipped and the others are to be put in .zip form in the resulting directory.

Hi Walter, thanks for the help. I have pasted the zip'd folders into the folder 'matlab_R2013b_maci64_installer' which was created when i downloaded the installer. However, when starting the installer an error message is returned at the 'select installation type' page "cannot find products". I did have to recompress the zip folders as Safari unzips them automatically once the download finishes. I can't see how that would affect it, but still worth saying. Should they have been pasted into the 'archive' folder within the installer directory? That seemed to work for the initial MATLAB install.

No, it would not be the archive folder.
The .zip files are apparently encrypted in some special way; it is plausible that the re-zip step you took would not work because of that.
In the Safari Preferences, in the first tab, at the bottom of the page, untick the "Open 'safe' files after downloading" box. Then re-download.

Not really applicable to this case.

I, and the Mathworks folks, think that any installation case can be handled by the Mathworks support team specially set up for that.
