AREA INSIDE TWO ROUGH CONCENTRIC CIRCLES

Hi all, I am supposed to take off the white area thickness in the attached figure (copra content of a sliced coconut). For that I thot of finding the edges first and then detecting circles using imfindcircles(). But the command is not working because my image is not a proper circle. Can anyone help me for solving this issue??
