How to do stem plots centered around a function?

Hi!
I want to use stem plots for showing the deviation of measured values from an equation and think stem is a good choice.
However, I have not found a way of doing these stem plots centered from anything else than a constant (basevalue).
Is there anything like a baseline that I could express my equation in and get the stem plots centered around?
