Have a read here (or here for more general advice). It will greatly improve your chances of getting an answer.

Beginning in R2020b, coast.mat is no longer available in Mapping Toolbox. Please use its replacement, coastlines.mat, instead. The content is the same, but the coordinate variables now have less generic names: coastlat and coastlon instead of lat and long, respectively.

load coast continues to be available from the Mapping Toolbox in R2018a and R2018b.

I am currently trying to use it in 2021a and it seems to have disappeared. I was on 2020a before and it worked fine then. Any idea how I can get it back please? Halfway through a paper and I need to tweak my plots!

coast appears to be in an example in the Boinformatics Toolbox now --
fullfile(matlabroot, 'examples', 'bioinfo', 'data', 'coast.mat')

As the path indicates, the Bioinformatic Toolbox example is using its own copy of coast.mat.
