Is there any way to use this simulation example to output a result of a car braking time or something similar to it, some car braking characteristic. And one more thing, is there any way to change the brake fluid properties, used in this simulation, like fluid boiling temperature or viscosity?

This model of the brake applies the force from the hydraulic brake system to a simple clutch block. You can take that force, divide by the brake cylinder bore to get the pressure, and connect that to the Disc Brake block in Simscape Driveline (see screenshot below).

This model assumes the brake fluid temperature does not change appreciably during the simulation. You can change the brake fluid temperature between runs. To have the brake fluid properties change with temperature during the simulation, you would need to model this using the Thermal Liquid Domain.
