Changing default behaviour of latex.m?

Are there any preferences settings for the latex.m command (or the ability to specify custom style files)?

Case in point: My preference is to use square brackets (i.e., []) for matrices. By default, latex(sym(eye(3))), produces:

\left(\begin{array}{ccc} 1 & 0 & 0\\ 0 & 1 & 0\\ 0 & 0 & 1 \end{array}\right)

which will render with parentheses (i.e. ()) instead.
