how to save data from gui handles?

I have a function with in a whole gui function: function Save20_Callback(hObject, eventdata, handles)

    handles.ValueCareChild(end+1,1)= get(handles.SliderCareChild,'Value');

guidata(hObject,handles)

How can I save the data in handles.ValueCareChild to a .mat file or .xlsx? save() and xlswrite() would not work.

What if I would like to save the all the values in handles.ValueCareChild within a "finish" button's CallBack function?
