How to convert gray image frame into video frames?

1. I have extracted the video frames from video.
2. Converted each video frame into images by using frame2image method
3. Convert each video frames into Gray images
4. Select the gray video frame with highest entropy
5. Embed some data into selected gray video frame of highst entropy
6. The problem is how to make again a video by using gray scale images
7. I alreay used im2frame method, but not getting deasired resuts

Help from anyone, would be appreciated
