If you want a broader introduction, consider the Image Processing for Engineering and Science specialization on Coursera. It's created by Mathworks and free to enroll.

What does "remove" mean to you? Images must remain rectangular. Using the Color Thresholder on the Apps tab of the tool ribbon you can segment out green pixels and create a mask. You can then (if you wish but it's not necessary) blacken pixels outside the green mask, or find the bounding box of the green and crop the image, or both. Explain much more explicitly what "remove" means to you, and what are your plans on after the pixels have been "removed".

Can you then put your plants on a darker background, like on a black fabric or something?
Actually you may not need to get every single pixel correct. Explain what you are going to do next, assuming you did get it right? Maybe just assess the plant's growth over time? If so you don't need anywhere near that kind of accuracy. The plant's area would change a lot just if you moved the pot to a new location, or took a photo the next day, or took another photo of more plants that were planted the same day. In other words, there are other sources of error that completely overwhel any error you get in the image segmentation. So don't worry about getting each and every pixel accurately classified. Just look at the long term results over several plants and sever weeks.
