You forgot to tell what version you have so someone can give you one answer instead of two possible answers.

subfigures do not exist in MATLAB. subplot() exists and creates multiple axes.
Is the question about how, given a particular subplot, you can modify the width of the associated colorbar ? If so then by far the easiest way is to record the handle that is returned by the colorbar() call and modify its Position property.

With R2014b or later, you can modify the Position property of the colorbar object.
With R2014a or earlier, a colorbar is actually an axes, and you can modify the axes Position property.
