I am using 2019b. Why is the standalone Desktop app grayed out. Is this a license thing? I work at a major company and figure we have the best license...

Check the output of ver to learn if you have MATLAB Compiler installed. If you do have it installed check the output of the license function (and/or check with your IT department or whomever maintains your licenses) to determine if there is a license for MATLAB Compiler available for you to use. Maybe all the licenses are checked out by other users at the moment.

Did you end up figuring out why it was greyed-out?

the Matlab compiler has to be installed from the Menu: Home->Add-Ons->Get Ads-Ons, there will come out a windows where you have to write Matlab compiler and install.
Another alternative option would be to compile from Menu: APPS->Package App and insert the app file .mlapp
